feat: API test scripts + quickstart
- start.sh: All-in-One Launcher (compose up + wait + API test)
- test_api_extended.py: Full CRUD, search, relationships
- test_seed.py: Mass data generator (accounts/contacts/leads)
- Updated README with test script documentation
